After all the pieces are cut, shape the gnocchi using your index finger and pressing it against a fork. This gives the gnocchi a concave shape with grooves and helps them cook more evenly and better hold the sauce.
To cook, bring about 4 quarts of water to a boil. Slowly add the gnocchi into the boiling water. Don't drop the whole tray in a once because it cools the water. Ten seconds after they float to the surface, take them out of the water.
