Lighting the fire.
We usually have a batch of hardwood such as cherry just for cooking. Using a hard wood gives a hotter fire and better flavor to the meat. Any fruitwoods are recomended. It's best to get the fire going a hour or two before you plan on cooking, giving the fire time to burn down, making hot coals.
